How can we tell if a cat is happy?

There are many ways a cat shows they are happy.

They are active. A happy cat explores their territory, investigates things of interest, and tries to interact with their environment.

A cat who hides all the time is a fearful and sad cat.

They make stuff "theirs." A happy cat rubs their face on furniture and finds different spots for hanging out.

Cats who stay in one place are not comfortable in their home.

They invite contact. A happy cat rubs their face on people they like.

Cats who avoid head contact do not have enough trust with people yet.

They make happy sounds. A happy cat talks to people or purrs when they are petted.

Some cats are very quiet, and we have to put our hand on their chest to feel their purr.

Some very simple but straight forward good points. Good behaviors to watch out for.

Happy cats play a lot and eat descent amounts of food too... Food intake is huge. If they stop eating that's not good.

I think it's not hard to see if a cat is happy, he will let you know with his expression and behavior.

We volunteered as cat fosterers last year, and one of our cats, Dixie, was feral. She spent all her time hiding in the basement, and only came out at night. If we caught her and held her, she wasn't aggressive, but she would cower and at the first opportunity she'd escape.

We eventually found her a home with a farmer, as a barn cat. They seldom see her, but from what they can tell, she seems happy.

Sometimes it takes patience with cats who've had bad experiences with people. My grandparents once took in a stray who started out not coming within 6 feet of anyone (they started feeding her outside), but after about 6 months she was making all the "happy cat" signs and could be held and pet easily. But they really had to work with her to earn her trust.
